The tamarind trees in the forests are old, some even centuries, rooted in forest soil, fruiting on nothing but monsoon rain and time. 

Soliga women harvest between February and April, once the pod shell has dried and become brittle on the tree; a sign the fruit inside has reached maximum sugar and acid development. The result is a tamarind that is dense, deeply sour, and genuinely complex, with none of the thin sharpness common in commercial varieties harvested before full ripeness.

Chefs who cook with it regularly find they need 20–30% less to achieve the same depth of flavour. Sold whole, no additives, no preservatives. This form preserves the paste from oxidation naturally.
